Most folks under-season. Go generous—especially on big cuts in if you're using the grill. When you flip meat some of the seasoning can shake off, so it helps to add a little extra.LAYER YOUR FLAVOR
You can use seasoning before and after cooking. A light dusting post-cook helps sharpen flavors without overpowering. Play around with mixing different flavors for contrast and complexity.TIMING MATTERS
If your seasoning has salt, apply it 45 minutes before cooking- or right before it hits the heat. Anywhere in between can pull moisture to the surface and dry it out.

The RED is my go-to all time favorite seasoning for pork! Anything I’m looking for a good classic bbq flavor is going to have the RED. From baby back slabs, to sprinkling some in my smoked Mac and cheese. It has a great flavor profile that’s not “too much” of anything. Perfect amount of sugar, salt, spices, and heat!
