SEASON LIKE A PRO

DON'T BE STINGY
Most folks under-season. Go generous—especially on big cuts in if you're using the grill. When you flip meat some of the seasoning can shake off, so it helps to add a little extra.
LAYER YOUR FLAVOR
You can use seasoning before and after cooking. A light dusting post-cook helps sharpen flavors without overpowering. Play around with mixing different flavors for contrast and complexity.
TIMING MATTERS
If your seasoning has salt, apply it 45 minutes before cooking- or right before it hits the heat. Anywhere in between can pull moisture to the surface and dry it out.

Black is the best!

I used Lowry's for years because I read an article by a Ruth Crist chef who said he obviously can't reveal how they season steaks, however, Lowry's is close. I've also tried just salt and pepper. Both are good, but Black is better, hands down! I've given everyone in my family a Thermopen One and a bottle of Black. I'm a hero! Also, Red on wings is excellent.
