      Most folks under-season. Go generous—especially on big cuts in if you're using the grill. When you flip meat some of the seasoning can shake off, so it helps to add a little extra.
      LAYER YOUR FLAVOR
      You can use seasoning before and after cooking. A light dusting post-cook helps sharpen flavors without overpowering. Play around with mixing different flavors for contrast and complexity.
      TIMING MATTERS
      If your seasoning has salt, apply it 45 minutes before cooking- or right before it hits the heat. Anywhere in between can pull moisture to the surface and dry it out.

      my new slicer

      10 in. length is desirable, don’t really need longer. Serrated edge is great, means business when slicing a brisket or thick meat roast. Handle has a good feel and fits right for no slip.
