      SEASON LIKE A PRO

      DON'T BE STINGY
      Most folks under-season. Go generous—especially on big cuts in if you're using the grill. When you flip meat some of the seasoning can shake off, so it helps to add a little extra.
      LAYER YOUR FLAVOR
      You can use seasoning before and after cooking. A light dusting post-cook helps sharpen flavors without overpowering. Play around with mixing different flavors for contrast and complexity.
      TIMING MATTERS
      If your seasoning has salt, apply it 45 minutes before cooking- or right before it hits the heat. Anywhere in between can pull moisture to the surface and dry it out.

      Great results

      Wrapping my baby backs in paper vs foil produced wonderful results. The ribs had better smoke. They were not “falling off the bone”, but had that bite of competition ribs. Terrific!
