        Most folks under-season. Go generous—especially on big cuts in if you're using the grill. When you flip meat some of the seasoning can shake off, so it helps to add a little extra.
        LAYER YOUR FLAVOR
        You can use seasoning before and after cooking. A light dusting post-cook helps sharpen flavors without overpowering. Play around with mixing different flavors for contrast and complexity.
        TIMING MATTERS
        If your seasoning has salt, apply it 45 minutes before cooking- or right before it hits the heat. Anywhere in between can pull moisture to the surface and dry it out.

        Loving It But Also Somewhat Disappointed

        I love my products, & they appear of high quality. My only complaint was that the book was signed but was supposed to be personalized as per the online order process. I provided my name in the details field, but the personalization was omitted. Please follow through on expectations or remove that piece from the cookbook order form; I was saddened by this omission. :(
